Rye Bread

Ingredients

1/4 cups warm water, 1 pkg yeast, lil sugar
1 cup warm water
2 tsp onion salt
4 tsp cocoa
1 tsp instant coffee
2 tbls oil
2 tbls molasses
4 tsps vinegar
2 tsp caraway seed
1/4 tsp fennel seed
2 cups all purpose flour , 1 cup rye flour

Proof yeast mixture.  Mix all ingredients except flour.  Add yeast mixture.  Mix flours and add 1 cup to liquid mixture and mix thoroughly.  Add rest of flour working in a little at a time.  Turn out on floured surface and knead for 8-10 min or until dough is smooth and elastic.  Place in greased bowl, cover and let rise in a warm draft free place.  I place a cup of  water in the microwave and run it for 2 minutes.  When the water is heated and the microwave warm I put my bowl in with it and let it rise.  Works great..unless of course you need to use the microwave.  When doubled in size punch down and place in loaf pan or shape into round and bake in cake pan.  350 deg until brown and sounds hollow when thumped.
